Peanut Butter & Nutella Swirl Cookies


I learnt something the hard way this week.

Once you start baking with Nutella, you can't stop.

This time around was nutella cookies.

I don't think I have to tell you how fantastic they were.

Were. As in past tense.

::shame::

Just the words nutella and cookie should be an easy sell.

Plus, as husband mentioned, nutella is good for you. (Marketing works, even if it is directed toward kids).

Doesn't matter to me, I'll do whatever husband says.

I love the way that man thinks.


Peanut Butter & Nutella Swirl Cookies
Adapted from: Sweetest Kitchen

Ingredients

1/2 cup unsalted butter, softened
3/4 cup smooth peanut butter
1/2 cup white sugar
1/2 cup packed brown sugar
1 egg
1/2 teaspoon vanilla extract
3/4 teaspoon baking soda
1/4 teaspoon salt
1 3/4 cups all-purpose flour
Approx. 1/4 cup Nutella

Directions

Preheat oven to 350° F.

Combine butter, peanut butter, sugars, egg, and vanilla. Mix until well blended.

Add flour, baking soda and salt. Drizzle Nutella on top of the dough then swirl it through the dough with a butter knife.

Chill dough 15 minutes in the refrigerator. Roll into balls by hand. Place on parchment lined cookie sheet. Using a fork, press down the balls to flatten slightly. Bake until edges are very lightly browned (about 7 to 10 minutes).

Allow to rest 2 minutes on cookie sheet before transferring cookies to a cooling rack.

  21. Ooooo, those look seriously yummy! I've never been able to keep Nutella in the house. :) Gotta say though, if you ever try the Rapunzel brand of chocolate hazelnut spread, wow, it is sublime.   30. Oh my... I have honestly never baked (or at least not since I have lived on my own, which has been... 11 years. So uh. Pretty much never! But these make me want to tryyyy! I love nutella (I highly suggest grilled nutella sandwiches in a panini press!) and pb cookies are my fave, so this sounds like a dream!

  59. If you're in need of the metric measurements, I converted and tested this recipe.

    115 g (1 stick) butter
    190 g peanut butter
    100 g sugar
    90 g brown sugar
    1 egg
    1/2 tsp vanilla extract
    3/4 tsp baking soda
    1/4 tsp salt
    190 g flour
    150 g Nutella

    Enjoy - these scored major points with my wife!

  69. Mine did too. Maybe too much flour? They wern't as gooey and soft as I thought they would be. More crumbly and dense.

  72. Peanut butter cookie doughs do tend to be rather crumbly. Don't try to roll the dough out and spread nutella on top like a pinwheel cookie.. too crumbly for that!

  80. Very easy to make I kneaded the nutella into the dough bc cant swirl, it mixed just a tad more so they are not as pretty. I used baking powder instead of baking soda and crunchy Pb vs smooth. They are good but cant taste nutella like I expected
