In Your Face Banana Bread


This bread calls for five! bananas. This is a recipe that is full of banana flavour so you really don't want to skimp on 'em bananas.

And for good measure, of course, I added some mini peanut butter cups. One never wants too much potassium without peanut butter.

In Your Face Banana Bread
Adapted from: Recipe Girl

Ingredients

2 cups all-purpose flour
1 tsp baking soda
¼ tsp salt
½ cup butter, softened
¾ cup (packed) brown sugar
2 large eggs, beaten
2 1/3 cups mashed over-ripe bananas (about 5 bananas)
1 cup of mini milk chocolate peanut butter cups (from Trader Joe's)


Directions

Preheat oven to 350° F. Grease 9×5-inch loaf pan.

In a large bowl, whisk together flour, soda and salt; set aside.

In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture and mini peanut butter cups into flour mixture; stir just to moisten.

Pour batter into prepared loaf pan. Bake 60- 65 minutes, or until toothpick inserted in center of loaf comes out clean.

Allow bread to cool in pan for 10 minutes, then turn out onto a wire rack to cool completely.

  4. Mmm this bread looks SO good! I love that there are 5 bananas in here. I also love that you left huge chunks of the banana in the bread... that's how I like my banana bread too. Some people like it pureed so that there are no chunks left but not me! Great idea adding in the peanut butter cups.

  5. I will certainly give this a try but will leave out the peanut butter cups, firstly because I do not like peanut butter but secondly because I have never heard of them over here. I do love bananas though :-) Take care Diane

  8. Looks great, I love that it uses up five bananas, I always have a lot of bananas because once they have brown flecks the kids won't eat them. We make a lot of banana bread, have to give this one a try!

  16. Oh how I would LOVE this! Bananas have been hideously expensive here in Sydney thanks to a cyclone a couple of months a go that ruined all the crops. Australia doesn't import any bananas so all we can do is wait until they are in plenty of supply again (and the price will come down).

  27. Oh. My. I like everything about this. My mother made a lot of banana bread (and zucchini bread) when I was growing up, and yet I've never tried to make it on my own. Not sure what I'm waiting for...maybe the introduction of chocolate and peanut butter is what I was waiting for!
